This month, we’re pleased to share a favourite recipe that you can make this summer using fruits and vegetables from your garden! The beauty of this recipe is that it can be made with any combination of vegetables (or fruit) that you’ve harvested. If you are using fruit, do not oven roast them first.
Ingredients
- 1 Package of store-bought phyllo
- A variety of garden veggies
- Cheese of choice (I suggest feta or ricotta)
- Oil
- Seasoning of choice
Preparation
- Preheat oven to 350° Celsius
- Dice your vegetables
- Toss them in oil and seasoning of choice
- Roast them until they are soft
- Mix the vegetable mixture with cheese of choice
- Reset the oven to temperature stated on the phyllo package
- Lay out the phyllo pastry and layer the vegetable and cheese mixture between the layers, making sure that there is enough phyllo to seal and create a top layer
- Brush lightly with oil and use a fork to poke a few holes to let the steam out
- Bake according to the directions

- Red pepper, zucchini, feta, mozzarella
- Raspberries, blackberries, ricotta
- Onion, spinach, ricotta
- Sun-dried tomato, spinach, basil, ricotta
- Strawberry, basil, ricotta
